  1. Scale + gut fish, wash thoroughly
  2. Make 3 diagonal cuts on each side
  3. Mix turmeric + chili + cumin + ginger-garlic + salt + lemon into paste
  4. Rub marinade inside + outside fish, rest 10 mins
  5. Heat oil to 170°C
  6. Carefully slide fish into hot oil
  7. Fry 4 mins on one side until scales crispy
  8. Flip carefully, fry 3 mins other side
  9. Internal flesh white, bones tender
  10. Place on absorbent paper
