- Scale + gut fish, wash thoroughly
- Make 3 diagonal cuts on each side
- Mix turmeric + chili + cumin + ginger-garlic + salt + lemon into paste
- Rub marinade inside + outside fish, rest 10 mins
- Heat oil to 170°C
- Carefully slide fish into hot oil
- Fry 4 mins on one side until scales crispy
- Flip carefully, fry 3 mins other side
- Internal flesh white, bones tender
- Place on absorbent paper
