- Roast semolina 4 mins until slightly darker
- Heat oil, add mustard (crackling 10 secs)
- Add ginger + green chili + curry leaves (30 secs)
- Add onion, fry until soft (2 mins)
- Add roasted semolina, stir 2 mins
- Pour water + salt, stir continuously
- When mixture is semi-cooked, scramble eggs directly into pot
- Fold gently, cook 2 mins until eggs cooked through
- Serve hot, egg aroma present
