  1. Roast semolina 4 mins until slightly darker
  2. Heat oil, add mustard (crackling 10 secs)
  3. Add ginger + green chili + curry leaves (30 secs)
  4. Add onion, fry until soft (2 mins)
  5. Add roasted semolina, stir 2 mins
  6. Pour water + salt, stir continuously
  7. When mixture is semi-cooked, scramble eggs directly into pot
  8. Fold gently, cook 2 mins until eggs cooked through
  9. Serve hot, egg aroma present
