- Cook toor dal with vegetables + turmeric until soft
- Reserve 1/2 cup cooking liquid
- Heat oil, add mustard + cumin + red chili (crackling)
- Add curry leaves + asafetida, fry 15 secs
- Pour tempering into cooked dal
- Add salt, fold gently
- Simmer 2 mins more
- Serve dal over white rice
- Drizzle ghee on top
