  1. Cook toor dal with vegetables + turmeric until soft
  2. Reserve 1/2 cup cooking liquid
  3. Heat oil, add mustard + cumin + red chili (crackling)
  4. Add curry leaves + asafetida, fry 15 secs
  5. Pour tempering into cooked dal
  6. Add salt, fold gently
  7. Simmer 2 mins more
  8. Serve dal over white rice
  9. Drizzle ghee on top
