  1. Soak clams in salt water 1 hour (removes sand)
  2. Heat oil, add ginger-garlic, fry 2 mins
  3. Add onion, fry until soft (2 mins)
  4. Add turmeric + green chili, fry 1 min
  5. Add clams, cook 5 mins (shells partially open)
  6. Pour coconut milk + water + tamarind
  7. Add curry leaves + salt
  8. Simmer 6 mins until clam shells fully open (discard unopened)
  9. Serve over white rice
  10. Creamy, clams tender, ocean aroma
