  1. Soak chickpeas overnight, boil until tender (45 mins)
  2. Drain + cool
  3. Heat oil, add mustard (crackling 10 secs)
  4. Add ginger + green chili + curry leaves (30 secs)
  5. Add onion, fry until soft (2 mins)
  6. Add boiled chickpeas, toss (2 mins)
  7. Add salt + coriander powder + lemon juice
  8. Toss gently 1 min
