- Marinate fish with turmeric + salt 10 mins
- Roast chili + coriander + cumin + fenugreek + pepper in dry pan 2 mins
- Grind roasted spices with coconut + ginger-garlic to paste
- Heat oil, fry onion until golden (3 mins)
- Add tomato, fry 2 mins
- Add coconut spice paste, fry 3 mins (dark paste)
- Pour water, bring to simmer
- Add fish, cook 6 mins until opaque
- Add salt, taste
- Serve with steamed rice
