  1. Heat oil, add cumin + coriander (toasted 30 secs)
  2. Add ginger-garlic, fry 2 mins
  3. Add onion, fry until golden (3 mins)
  4. Add tomato paste, fry 3 mins
  5. Add chili + turmeric, fry 1 min
  6. Add boiled chickpeas, stir well
  7. Pour 0.5 cup water, add salt
  8. Simmer 8 mins until sauce coats chickpeas
  9. Add kasuri methi (crushed), cook 1 min
  10. Serve over white rice
