- Heat ghee, add cumin + black pepper (toasted 30 secs)
- Add ginger, fry 1 min
- Add rice + dal, toss 2 mins
- Pour water + salt, bring to boil
- Reduce heat, cover
- Cook 15 mins until porridge/congee consistency
- Add curry leaves, fold in ghee
- Serve warm, ghee coating visible
