👩‍🍳 How to make Upma

  1. Boil water in pot over high heat (5 minutes to rolling boil)
  2. Heat mustard oil in separate pan over medium heat (40 seconds)
  3. Add mustard seeds, let crackle (15 seconds, seeds will pop)
  4. Add cumin seeds, stir (10 seconds)
  5. Add curry leaves, stir (5 seconds)
  6. Add diced potatoes, fry until edges soften (3�4 minutes)
  7. Add peas, green chillies, turmeric (stir 30 seconds)
  8. Reduce heat to low
  9. Slowly sprinkle semolina while stirring constantly to avoid lumps (should take 2�3 minutes to add all)
  10. Gradually add hot water while stirring (add 100ml at a time, wait for absorption)
  11. Continue stirring until water is absorbed and mixture is thick (5�6 minutes total water addition)
  12. Mix in salt, cook 1�2 minutes until grains are separated and cooked through
  13. Should have slight crumbly texture, not sticky
