👩🍳 How to make Upma
- Boil water in pot over high heat (5 minutes to rolling boil)
- Heat mustard oil in separate pan over medium heat (40 seconds)
- Add mustard seeds, let crackle (15 seconds, seeds will pop)
- Add cumin seeds, stir (10 seconds)
- Add curry leaves, stir (5 seconds)
- Add diced potatoes, fry until edges soften (3�4 minutes)
- Add peas, green chillies, turmeric (stir 30 seconds)
- Reduce heat to low
- Slowly sprinkle semolina while stirring constantly to avoid lumps (should take 2�3 minutes to add all)
- Gradually add hot water while stirring (add 100ml at a time, wait for absorption)
- Continue stirring until water is absorbed and mixture is thick (5�6 minutes total water addition)
- Mix in salt, cook 1�2 minutes until grains are separated and cooked through
- Should have slight crumbly texture, not sticky
