  1. Dry roast sesame seeds in pan over medium heat (2�3 minutes, seeds should smell nutty and be very dry)
  2. Transfer to bowl
  3. Heat ghee in same pan over low heat (30 seconds)
  4. Add jaggery, stir until it melts (2�3 minutes)
  5. Mixture should coat the back of a spoon
  6. Pour hot jaggery into roasted sesame seeds
  7. Quickly add cardamom and dry fruit
  8. Mix very well while hot (should be cohesive but not mushy)
  9. Let cool slightly (2�3 minutes)
  10. Wet hands with water, shape into 1-inch diameter balls
  11. Cool completely before storing
