👩🍳 How to make Puri Aalu Bhaja
- *Puri*:
- Wheat flour: 200g
- Salt: 2g (� tsp)
- Water: 100ml
- Oil: 30ml (2 tbsp)
- *Aalu Bhaja*:
- Potatoes: 300g, boiled and mashed
- Turmeric powder: 1g (? tsp)
- Salt: 2g (� tsp)
- Green chillies: 2, minced
- Mustard oil: 15ml (1 tbsp)
- (Puri):
- Mix flour, salt in bowl
- Gradually add water while kneading into soft dough (knead 5 minutes)
- Add oil, knead further (3 minutes until smooth and springy)
- Cover dough, rest 15�20 minutes
- Divide into 10 equal balls
- Roll each ball to 4-inch diameter circle
- Heat 150ml oil in deep pan over medium-high heat (175�C, test: drop tiny dough piece, should sizzle and float)
- Gently place puri into oil
- Press down with slotted spoon immediately, oil will bubble
- Within 2�3 seconds, puri should puff up, flip
- Cook other side 15�20 seconds until pale golden
- Remove, drain on paper towels
- (Aalu Bhaja):
- Heat 15ml mustard oil in pan over medium heat (40 seconds)
- Add minced green chillies, stir (15 seconds)
- Add mashed potato, turmeric, salt
- Mix thoroughly until chillies are distributed (2 minutes)
- Heat through (1 minute), should smell aromatic
- Serve hot
