👩‍🍳 How to make Puri Aalu Bhaja

  1. *Puri*:
  2. Wheat flour: 200g
  3. Salt: 2g (� tsp)
  4. Water: 100ml
  5. Oil: 30ml (2 tbsp)
  6. *Aalu Bhaja*:
  7. Potatoes: 300g, boiled and mashed
  8. Turmeric powder: 1g (? tsp)
  9. Salt: 2g (� tsp)
  10. Green chillies: 2, minced
  11. Mustard oil: 15ml (1 tbsp)
  12. (Puri):
  13. Mix flour, salt in bowl
  14. Gradually add water while kneading into soft dough (knead 5 minutes)
  15. Add oil, knead further (3 minutes until smooth and springy)
  16. Cover dough, rest 15�20 minutes
  17. Divide into 10 equal balls
  18. Roll each ball to 4-inch diameter circle
  19. Heat 150ml oil in deep pan over medium-high heat (175�C, test: drop tiny dough piece, should sizzle and float)
  20. Gently place puri into oil
  21. Press down with slotted spoon immediately, oil will bubble
  22. Within 2�3 seconds, puri should puff up, flip
  23. Cook other side 15�20 seconds until pale golden
  24. Remove, drain on paper towels
  25. (Aalu Bhaja):
  26. Heat 15ml mustard oil in pan over medium heat (40 seconds)
  27. Add minced green chillies, stir (15 seconds)
  28. Add mashed potato, turmeric, salt
  29. Mix thoroughly until chillies are distributed (2 minutes)
  30. Heat through (1 minute), should smell aromatic
  31. Serve hot
