- Heat mustard oil in wok/large pan over medium-high heat (50 seconds)
- Add mustard seeds, let crackle (10 seconds)
- Add cumin seeds, stir (5 seconds)
- Add minced onion, fry until golden (2�3 minutes)
- Add minced green chillies, stir (20 seconds)
- Add diced carrots, fry (2 minutes)
- Add peas, fry (1 minute)
- Add turmeric, salt, mix well (30 seconds)
- Add cooled rice, break up any clumps with spoon (2�3 minutes)
- Stir-fry until rice is hot throughout and grains are separated (3�4 minutes total from adding rice)
- Should smell aromatic and have slight shine from oil
