- Place cooked rice in bowl
- Add salt, pour water and yogurt slowly
- Mix gently (do not mash rice)
- Cover bowl loosely, let sit 6�8 hours at room temperature (should be slightly tangy, fermented)
- Heat mustard oil in small pan over medium heat (30 seconds)
- Add mustard seeds, let crackle (10 seconds)
- Add cumin seeds, stir (5 seconds)
- Add green chillies, fry (20 seconds)
- Add curry leaves, fry (10 seconds)
- Pour this tempering into fermented rice, mix gently
- Serve at room temperature or chilled
