  1. Place cooked rice in bowl
  2. Add salt, pour water and yogurt slowly
  3. Mix gently (do not mash rice)
  4. Cover bowl loosely, let sit 6�8 hours at room temperature (should be slightly tangy, fermented)
  5. Heat mustard oil in small pan over medium heat (30 seconds)
  6. Add mustard seeds, let crackle (10 seconds)
  7. Add cumin seeds, stir (5 seconds)
  8. Add green chillies, fry (20 seconds)
  9. Add curry leaves, fry (10 seconds)
  10. Pour this tempering into fermented rice, mix gently
  11. Serve at room temperature or chilled
