👩‍🍳 How to make Medhu Vada

  1. Drain soaked urad dal completely
  2. Grind to fluffy paste (3�4 minutes, should be light and airy, not dense)
  3. Add minced green chillies, ginger, salt, cumin seeds
  4. Mix by hand for 1 minute (should incorporate air)
  5. Heat oil in deep pan over medium-high heat (170�C, test: drop small piece of batter, should sizzle and float in 2 seconds)
  6. Wet hand with water
  7. Take 3 tbsp batter, shape into ball
  8. With wet index finger, make hole in center to form donut shape
  9. Carefully drop into hot oil
  10. Fry for 2�3 minutes, turning once with slotted spoon
  11. Should be golden-brown and sound hollow when tapped
  12. Drain on paper towels
