👩🍳 How to make Medhu Vada
- Drain soaked urad dal completely
- Grind to fluffy paste (3�4 minutes, should be light and airy, not dense)
- Add minced green chillies, ginger, salt, cumin seeds
- Mix by hand for 1 minute (should incorporate air)
- Heat oil in deep pan over medium-high heat (170�C, test: drop small piece of batter, should sizzle and float in 2 seconds)
- Wet hand with water
- Take 3 tbsp batter, shape into ball
- With wet index finger, make hole in center to form donut shape
- Carefully drop into hot oil
- Fry for 2�3 minutes, turning once with slotted spoon
- Should be golden-brown and sound hollow when tapped
- Drain on paper towels
