👩🍳 How to make Idli
- Grind soaked rice to smooth paste (3�4 minutes, using soaking water, paste should be very smooth)
- Grind urad dal separately to fluffy paste (4�5 minutes, paste should be airy)
- Mix both pastes gently with salt
- Cover, let ferment 6�8 hours at 25�28�C (batter should rise and have bubbly texture)
- Fill idli mold cups halfway with batter
- Stack molds in idli cooker
- Bring water in cooker to boil (steam should be visible)
- Place stacked molds into cooker
- Cover cooker with lid
- Steam for 6�7 minutes (idlis will pull away from sides slightly)
- Remove from heat, wait 1 minute before opening
- Run knife around edges, pop out onto plate
