👩‍🍳 How to make Idli

  1. Grind soaked rice to smooth paste (3�4 minutes, using soaking water, paste should be very smooth)
  2. Grind urad dal separately to fluffy paste (4�5 minutes, paste should be airy)
  3. Mix both pastes gently with salt
  4. Cover, let ferment 6�8 hours at 25�28�C (batter should rise and have bubbly texture)
  5. Fill idli mold cups halfway with batter
  6. Stack molds in idli cooker
  7. Bring water in cooker to boil (steam should be visible)
  8. Place stacked molds into cooker
  9. Cover cooker with lid
  10. Steam for 6�7 minutes (idlis will pull away from sides slightly)
  11. Remove from heat, wait 1 minute before opening
  12. Run knife around edges, pop out onto plate
