👩‍🍳 How to make Dosa

  1. Grind soaked rice to smooth paste using soaking water (3�4 minutes)
  2. Grind urad dal separately to fluffy paste (4�5 minutes)
  3. Mix pastes with salt
  4. Ferment 6�8 hours at 25�28�C
  5. Heat cast-iron griddle over high heat (200�C, test: water droplet should sizzle and evaporate in 1 second)
  6. Grease lightly with oil
  7. Pour � cup batter in center of griddle
  8. Immediately spread with back of ladle in circular spiral motion from center outward (should cover griddle in 3�4 seconds for thin crispy dosa)
  9. Drizzle oil around edges
  10. Cook 1�2 minutes until bottom is golden and edges curl
  11. Flip, cook other side 30 seconds until light brown spots appear
  12. Fold in half or roll, transfer to plate
