👩🍳 How to make Dosa
- Grind soaked rice to smooth paste using soaking water (3�4 minutes)
- Grind urad dal separately to fluffy paste (4�5 minutes)
- Mix pastes with salt
- Ferment 6�8 hours at 25�28�C
- Heat cast-iron griddle over high heat (200�C, test: water droplet should sizzle and evaporate in 1 second)
- Grease lightly with oil
- Pour � cup batter in center of griddle
- Immediately spread with back of ladle in circular spiral motion from center outward (should cover griddle in 3�4 seconds for thin crispy dosa)
- Drizzle oil around edges
- Cook 1�2 minutes until bottom is golden and edges curl
- Flip, cook other side 30 seconds until light brown spots appear
- Fold in half or roll, transfer to plate
