👩‍🍳 How to make Chakuli Pitha

  1. Soak rice and urad dal separately for 4 hours in water
  2. Grind soaked rice to fine paste using soaking water (2 minutes grinding, paste should be smooth)
  3. Grind urad dal separately to fluffy paste (3-4 minutes)
  4. Mix both pastes with salt, cover bowl with cloth (fermentation temperature: 25�28�C)
  5. Leave to ferment 6�8 hours until risen and bubbly (porous texture = ready)
  6. Heat cast-iron griddle (tawa) over medium heat (160�C)
  7. Grease lightly with mustard oil
  8. Pour � cup batter, spread circularly from center outward using back of ladle in 3-second sweeping motion
  9. Cook first side until edges turn light brown and pull away (2�3 minutes, medium heat)
  10. Flip carefully, cook second side 30�45 seconds until pale spots appear
  11. Transfer to plate, serve hot
