👩🍳 How to make Brinjal Bhaja
- Salt the eggplant slices, let sit 10 minutes (releases water)
- Pat dry with cloth
- Heat mustard oil in large pan over medium-high heat (50 seconds)
- Add mustard seeds, let crackle (10 seconds)
- Add eggplant slices in single layer (may need 2 batches)
- Fry undisturbed for 3�4 minutes until bottom is golden
- Flip, fry other side 3�4 minutes until edges are crispy
- Sprinkle turmeric and red chilli powder (in last minute)
- Eggplant should be completely tender and golden-brown
- Serve hot
