👩🍳 How to make Baati
- Mix flour and salt in bowl
- Add 20ml oil, rub into flour until breadcrumb texture
- Gradually add water while kneading into medium-stiff dough (5 minutes)
- Dough should be firmer than puri dough
- Cover, rest 15�20 minutes
- Divide into 12 equal balls
- Roll each ball on lightly oiled surface to 2-inch diameter sphere (smooth, no cracks)
- Heat 150ml oil in deep pan over medium-high heat (175�C)
- Carefully drop baati into oil
- Fry for 3�4 minutes, turning every 30 seconds with slotted spoon until all sides are golden-brown
- Should feel hard and sound hollow when tapped
- Drain on paper towels
- Store in airtight container (stays crispy for days)
