👩‍🍳 How to make Baati

  1. Mix flour and salt in bowl
  2. Add 20ml oil, rub into flour until breadcrumb texture
  3. Gradually add water while kneading into medium-stiff dough (5 minutes)
  4. Dough should be firmer than puri dough
  5. Cover, rest 15�20 minutes
  6. Divide into 12 equal balls
  7. Roll each ball on lightly oiled surface to 2-inch diameter sphere (smooth, no cracks)
  8. Heat 150ml oil in deep pan over medium-high heat (175�C)
  9. Carefully drop baati into oil
  10. Fry for 3�4 minutes, turning every 30 seconds with slotted spoon until all sides are golden-brown
  11. Should feel hard and sound hollow when tapped
  12. Drain on paper towels
  13. Store in airtight container (stays crispy for days)
