👩🍳 How to make Aloo Bhaja
- Heat mustard oil in large pan over medium-high heat (50 seconds)
- Add mustard seeds, let crackle (10 seconds)
- Add cumin seeds, stir (5 seconds)
- Add minced green chillies, fry (20 seconds)
- Add potato slices, mix to coat with oil
- Spread in single layer (may need 2 batches if pan is small)
- Fry undisturbed for 3�4 minutes until bottom edges turn golden
- Stir, fry another 3�4 minutes
- Potatoes should be golden-brown and crispy at edges, soft inside
- Add turmeric and salt, toss well (2 minutes)
- Serve hot
