👩‍🍳 How to make Usoi

  1. Mix rice flour with turmeric, salt, and pounded fermented fish (2 min)
  2. Add diced onion and minced green chilli (1 min)
  3. Gradually add water while stirring to form thick paste (batter) (2 min)
  4. Fold in chopped coriander (30 seconds)
  5. Heat tawa to medium heat, lightly oil surface
  6. Drop 2 tablespoon batter portions onto tawa, flatten to 1cm thickness
  7. Cook 4-5 min on first side until pale brown and edges firm (push gently - should hold shape)
  8. Flip carefully, cook 3-4 min on reverse side until light golden
  9. Transfer to plate
