👩🍳 How to make Usoi
- Mix rice flour with turmeric, salt, and pounded fermented fish (2 min)
- Add diced onion and minced green chilli (1 min)
- Gradually add water while stirring to form thick paste (batter) (2 min)
- Fold in chopped coriander (30 seconds)
- Heat tawa to medium heat, lightly oil surface
- Drop 2 tablespoon batter portions onto tawa, flatten to 1cm thickness
- Cook 4-5 min on first side until pale brown and edges firm (push gently - should hold shape)
- Flip carefully, cook 3-4 min on reverse side until light golden
- Transfer to plate
