- Place fermented soybean paste in a bowl
- Add minced garlic, ginger, and chilli
- Stir well to combine aromatics with paste (1 min)
- Gradually add water while stirring to reach pourable consistency (2 min)
- Add finely diced onion and salt
- Stir well (1 min)
- Cover bowl, let sit at room temperature overnight (8-12 hours)
- Fermentation continues; mixture becomes more pungent
- Add fresh coriander just before consuming
- Serve at room temperature with rice
