  1. Beat eggs with salt (1 min)
  2. Heat oil in non-stick pan to medium-high (1 min)
  3. Add diced onion, cook 1 minute
  4. Add finely diced tomato, cook 1 minute (this brings moisture, so cook briefly)
  5. Add minced green chilli, cook 30 seconds
  6. Pour beaten eggs, spread quickly (30 seconds)
  7. Let set on bottom (1-2 min), fold when edges cooked but center still moist
  8. Transfer to plate, sprinkle coriander
  9. Serve immediately
