  1. Soak sabudana in water 30 minutes until soft and translucent (30 min prep)
  2. Boil potato, peel, dice (5 min)
  3. Heat oil in pan over medium
  4. Add cumin seeds, crackle 30 seconds
  5. Add asafoetida, swirl (10 seconds)
  6. Add minced ginger, cook 1 minute
  7. Add diced onion, cook 2 minutes
  8. Add soaked sabudana, stir gently (1 min)
  9. Add boiled potato, mix carefully (1 min)
  10. Add salt and minced chilli
  11. Cook 3-4 minutes on medium heat, stirring gently (sabudana heats through)
  12. Add crushed peanuts and coriander, fold gently
  13. Serve warm
