- Soak sabudana in water 30 minutes until soft and translucent (30 min prep)
- Boil potato, peel, dice (5 min)
- Heat oil in pan over medium
- Add cumin seeds, crackle 30 seconds
- Add asafoetida, swirl (10 seconds)
- Add minced ginger, cook 1 minute
- Add diced onion, cook 2 minutes
- Add soaked sabudana, stir gently (1 min)
- Add boiled potato, mix carefully (1 min)
- Add salt and minced chilli
- Cook 3-4 minutes on medium heat, stirring gently (sabudana heats through)
- Add crushed peanuts and coriander, fold gently
- Serve warm
