👩🍳 How to make Tapioca Kheer
- Soak sabudana in water 30 minutes until soft and translucent (30 min)
- Drain soaked sabudana thoroughly
- In heavy pan, heat ghee over medium
- Add sabudana, stir gently 2 minutes (this prevents sticking)
- Pour milk into pan, add crushed cardamom
- Bring to boil over medium heat (5 min)
- Reduce heat to low
- Simmer 10-12 minutes, stirring frequently (sabudana cooks and becomes translucent)
- Add jaggery, stir until dissolved (2 min)
- In separate pan, fry cashews and raisins in remaining ghee (1 min)
- Add fried nuts and raisins to kheer
- Add nutmeg powder
- Stir gently
- Serve hot or warm
