👩‍🍳 How to make Tamarind Vegetable

  1. Soak tamarind in 50ml warm water 5 minutes, extract pulp (5 min)
  2. Dice vegetables (2 min)
  3. Heat oil in pot over medium (1 min)
  4. Add sliced ginger, cook 1 minute
  5. Add coarsely chopped onion, cook 2 minutes
  6. Add turmeric, stir (30 seconds)
  7. Add sliced green chilli
  8. Add diced vegetables, stir (1 min)
  9. Pour remaining water (350ml), add salt
  10. Bring to boil (5 min)
  11. Reduce heat to medium-low
  12. Simmer 10-12 minutes until vegetables are tender
  13. Add tamarind pulp (reserve liquid), stir well
  14. Add remaining tamarind soaking liquid if needed
  15. Simmer additional 2 minutes
  16. Serve hot
