👩🍳 How to make Tamarind Vegetable
- Soak tamarind in 50ml warm water 5 minutes, extract pulp (5 min)
- Dice vegetables (2 min)
- Heat oil in pot over medium (1 min)
- Add sliced ginger, cook 1 minute
- Add coarsely chopped onion, cook 2 minutes
- Add turmeric, stir (30 seconds)
- Add sliced green chilli
- Add diced vegetables, stir (1 min)
- Pour remaining water (350ml), add salt
- Bring to boil (5 min)
- Reduce heat to medium-low
- Simmer 10-12 minutes until vegetables are tender
- Add tamarind pulp (reserve liquid), stir well
- Add remaining tamarind soaking liquid if needed
- Simmer additional 2 minutes
- Serve hot
