👩🍳 How to make Tamarind Rice
- Soak tamarind in 50ml warm water 5 minutes, extract pulp (5 min)
- Heat oil in large pan over medium heat (1 min)
- Add mustard seeds, let crackle until they pop (1 min)
- Add cumin seeds, crackle 20 seconds
- Add asafoetida, swirl (10 seconds)
- Add minced ginger, cook 30 seconds
- Add diced onion, cook 2 minutes until translucent
- Add minced green chilli and dry red chilli, cook 30 seconds
- Add cooked rice, break up any clumps with spoon (2 min)
- Add tamarind pulp, mix thoroughly (1 min)
- Add salt, stir well
- Heat through on medium for 2-3 minutes (flavors blend)
- Add coriander, fold gently
- Serve hot or at room temperature
