👩‍🍳 How to make Tamarind Rice

  1. Soak tamarind in 50ml warm water 5 minutes, extract pulp (5 min)
  2. Heat oil in large pan over medium heat (1 min)
  3. Add mustard seeds, let crackle until they pop (1 min)
  4. Add cumin seeds, crackle 20 seconds
  5. Add asafoetida, swirl (10 seconds)
  6. Add minced ginger, cook 30 seconds
  7. Add diced onion, cook 2 minutes until translucent
  8. Add minced green chilli and dry red chilli, cook 30 seconds
  9. Add cooked rice, break up any clumps with spoon (2 min)
  10. Add tamarind pulp, mix thoroughly (1 min)
  11. Add salt, stir well
  12. Heat through on medium for 2-3 minutes (flavors blend)
  13. Add coriander, fold gently
  14. Serve hot or at room temperature
