- Soak tamarind in 50ml warm water, extract pulp (5 min)
- Heat oil in large pan (1 min)
- Add mustard seeds, crackle until they pop
- Add cumin seeds, crackle 20 seconds
- Add asafoetida, swirl (10 seconds)
- Add minced ginger, cook 30 seconds
- Add diced onion and whole dry red chilli, cook 2 minutes
- Add cooked rice, break clumps (2 min)
- Add tamarind pulp, mix thoroughly (1 min)
- Add salt and minced green chilli, stir
- Heat through 2 minutes (flavors blend)
- Add crushed peanuts and coriander, fold
- Serve hot or at room temperature
