  1. Soak tamarind in 50ml warm water, extract pulp (5 min)
  2. Heat oil in large pan (1 min)
  3. Add mustard seeds, crackle until they pop
  4. Add cumin seeds, crackle 20 seconds
  5. Add asafoetida, swirl (10 seconds)
  6. Add minced ginger, cook 30 seconds
  7. Add diced onion and whole dry red chilli, cook 2 minutes
  8. Add cooked rice, break clumps (2 min)
  9. Add tamarind pulp, mix thoroughly (1 min)
  10. Add salt and minced green chilli, stir
  11. Heat through 2 minutes (flavors blend)
  12. Add crushed peanuts and coriander, fold
  13. Serve hot or at room temperature
