  1. Heat oil in pot over medium (1 min)
  2. Add cumin seeds, let crackle 30 seconds
  3. Add asafoetida, swirl (10 seconds)
  4. Add grated ginger, cook 1 minute
  5. Add coarsely chopped onion, cook 2 minutes
  6. Add sprouted mung beans, stir (1 min)
  7. Pour water and add salt
  8. Bring to boil (4 min)
  9. Add sliced green chilli
  10. Simmer 10-12 minutes (beans soften, flavors develop)
  11. Stir occasionally
  12. When beans are very soft, add coriander
  13. Serve hot
