- Heat oil in pot over medium (1 min)
- Add cumin seeds, let crackle 30 seconds
- Add asafoetida, swirl (10 seconds)
- Add grated ginger, cook 1 minute
- Add coarsely chopped onion, cook 2 minutes
- Add sprouted mung beans, stir (1 min)
- Pour water and add salt
- Bring to boil (4 min)
- Add sliced green chilli
- Simmer 10-12 minutes (beans soften, flavors develop)
- Stir occasionally
- When beans are very soft, add coriander
- Serve hot
