👩‍🍳 How to make Spinach and Garlic Tan

  1. Wash and thoroughly dry spinach (moisture affects dough consistency) (2 min)
  2. Chop finely (1 min)
  3. Mix rice flour with salt (30 seconds)
  4. Add chopped spinach, minced garlic, grated ginger, minced chilli (1 min)
  5. Gradually add water to form soft dough (2 min)
  6. Knead gently with oiled palms (1 min)
  7. Divide into 4 equal portions
  8. On oiled board, flatten each to thin circle (4mm thick)
  9. Heat cast iron tawa to medium-high
  10. Place tan on hot tawa, cook 2-3 min until slight puffing visible at edges
  11. Drizzle oil, flip
  12. Cook other side 2-3 min until light golden
  13. Press gently with spatula to ensure thorough cooking
  14. Remove when edges turn pale brown
