👩‍🍳 How to make Ridge Gourd Paknam

  1. Peel and finely chop ridge gourd (2 min)
  2. Salt slightly, let sit 2 min to release moisture, squeeze dry (2 min)
  3. Mix besan with salt and turmeric (1 min)
  4. Add chopped ridge gourd, onion, chilli, coriander (2 min)
  5. Gradually add water to form thick batter (1 min)
  6. Heat tawa to medium, apply oil
  7. Pour 95ml batter, flatten to 8mm
  8. Cook 6-7 min until bottom is golden
  9. Drizzle oil, flip
  10. Cook 4-5 min until other side is light golden
  11. Transfer to plate
