  1. Mix ragi flour and rice flour in a bowl (2 min)
  2. Add salt, chopped garlic chives, and grated ginger (1 min)
  3. Pour hot water gradually while mixing until soft dough forms (3 min)
  4. Cool slightly, then knead with oiled palms until smooth (2 min)
  5. Divide dough into 6 equal portions
  6. On an oiled board, flatten each portion into 4mm thick circle (2 min per circle)
  7. Heat cast iron tawa to medium-high heat
  8. Place tan on tawa, cook 1 min per side until light golden (look for small bubbles at edges)
  9. Drizzle oil between flips
  10. Remove when edges turn pale brown, pair with ginger pickle or tea
