- Mix ragi flour and rice flour in a bowl (2 min)
- Add salt, chopped garlic chives, and grated ginger (1 min)
- Pour hot water gradually while mixing until soft dough forms (3 min)
- Cool slightly, then knead with oiled palms until smooth (2 min)
- Divide dough into 6 equal portions
- On an oiled board, flatten each portion into 4mm thick circle (2 min per circle)
- Heat cast iron tawa to medium-high heat
- Place tan on tawa, cook 1 min per side until light golden (look for small bubbles at edges)
- Drizzle oil between flips
- Remove when edges turn pale brown, pair with ginger pickle or tea
