👩🍳 How to make Ragi Kheer
- In heavy pan, heat ghee over medium
- Add ragi flour, roast dry 3-4 minutes, stirring constantly (this removes raw taste)
- Gradually pour milk while stirring constantly to avoid lumps (2 min)
- Add crushed cardamom
- Bring to boil (5 min)
- Reduce heat to low
- Simmer 12-15 minutes, stirring frequently (flour cooks and mixture thickens)
- Add jaggery, stir until dissolved (2 min)
- In separate pan, fry cashews and raisins in remaining ghee (1 min)
- Add fried nuts and raisins
- Add nutmeg powder
- Stir gently
- Serve hot or warm
