👩‍🍳 How to make Ragi Kheer

  1. In heavy pan, heat ghee over medium
  2. Add ragi flour, roast dry 3-4 minutes, stirring constantly (this removes raw taste)
  3. Gradually pour milk while stirring constantly to avoid lumps (2 min)
  4. Add crushed cardamom
  5. Bring to boil (5 min)
  6. Reduce heat to low
  7. Simmer 12-15 minutes, stirring frequently (flour cooks and mixture thickens)
  8. Add jaggery, stir until dissolved (2 min)
  9. In separate pan, fry cashews and raisins in remaining ghee (1 min)
  10. Add fried nuts and raisins
  11. Add nutmeg powder
  12. Stir gently
  13. Serve hot or warm
