👩‍🍳 How to make Poi Paknam

  1. Peel, boil tapioca root in salted water 12-15 min until very tender (10 min)
  2. Mash thoroughly while warm until smooth with no lumps (2 min)
  3. Cool slightly (1 min)
  4. Combine mashed tapioca with besan and salt (1 min)
  5. Add chopped onion, chilli, coriander, turmeric (1 min)
  6. Gradually add water (tapioca already moist, so less water needed) (1 min)
  7. Mix until well combined
  8. Heat tawa to medium, apply oil
  9. Scoop 95ml mixture, flatten to 8-9mm thickness
  10. Cook 6-7 min until bottom turns golden-brown and edges are firm
  11. Drizzle oil, flip
  12. Cook 4-5 min until opposite side is light golden
  13. Transfer to plate
