👩🍳 How to make Poi Paknam
- Peel, boil tapioca root in salted water 12-15 min until very tender (10 min)
- Mash thoroughly while warm until smooth with no lumps (2 min)
- Cool slightly (1 min)
- Combine mashed tapioca with besan and salt (1 min)
- Add chopped onion, chilli, coriander, turmeric (1 min)
- Gradually add water (tapioca already moist, so less water needed) (1 min)
- Mix until well combined
- Heat tawa to medium, apply oil
- Scoop 95ml mixture, flatten to 8-9mm thickness
- Cook 6-7 min until bottom turns golden-brown and edges are firm
- Drizzle oil, flip
- Cook 4-5 min until opposite side is light golden
- Transfer to plate
