  1. Dice vegetables (2 min)
  2. Heat minimal oil in pot over medium (1 min)
  3. Add sliced ginger, cook 1 minute
  4. Add coarsely chopped onion, cook 2 minutes
  5. Add sliced green chilli
  6. Add diced vegetables, stir gently (1 min)
  7. Pour water, add salt
  8. Bring to boil (5 min)
  9. Reduce heat to medium-low
  10. Simmer 10-12 minutes until vegetables are tender
  11. Stir occasionally
