- Dice vegetables (2 min)
- Heat minimal oil in pot over medium (1 min)
- Add sliced ginger, cook 1 minute
- Add coarsely chopped onion, cook 2 minutes
- Add sliced green chilli
- Add diced vegetables, stir gently (1 min)
- Pour water, add salt
- Bring to boil (5 min)
- Reduce heat to medium-low
- Simmer 10-12 minutes until vegetables are tender
- Stir occasionally
- Serve hot
