  1. Peel and finely chop ridge gourd, salt slightly, squeeze dry (2 min)
  2. Mix besan with salt (1 min)
  3. Add chopped ridge gourd, minced onion, chilli (1 min)
  4. Gradually add water (1 min)
  5. Heat tawa to medium, oil surface
  6. Pour 95ml batter, flatten to 8mm
  7. Cook 6-7 min until golden
  8. Drizzle oil, flip
  9. Cook 4-5 min until light golden
  10. Transfer to plate
