  1. Mix rice flour with salt and cumin seeds (1 min)
  2. Add minced onion, ginger, chilli (1 min)
  3. Gradually add water to form soft dough (2 min)
  4. Knead gently with oiled palms (1 min)
  5. Divide into 5 equal portions
  6. On oiled board, flatten each to thin circle (4mm)
  7. Heat tawa to medium-high
  8. Place tan on tawa, cook 2 min until slight puffing visible
  9. Drizzle oil, flip
  10. Cook 1.5 min on other side until light golden
  11. Press gently with spatula
  12. Remove when edges are pale brown
