👩🍳 How to make Ngari Thongba
- Clean fermented fish thoroughly, remove scales, rinse, drain (2 min)
- Heat oil in pot over medium (1 min)
- Add minced garlic, cook 30 seconds
- Add sliced ginger, cook 1 minute
- Add coarsely chopped onion, cook 2 minutes
- Add sliced green chilli
- Add cleaned fermented fish pieces, stir (1 min)
- Pour water (use minimal water since ngari releases liquid)
- Taste and add salt sparingly (ngari is already salty)
- Bring to boil (3 min)
- Reduce heat to medium-low
- Simmer 8-10 minutes, stirring occasionally
- Broth becomes dark and deeply umami
- Serve hot in small bowls (strong flavor, eaten in small portions)
