👩‍🍳 How to make Mutton Thongba

  1. Cut mutton, pat dry (2 min)
  2. Heat oil in heavy pot over medium-high (1 min)
  3. Brown mutton in batches on all sides, 10-12 min total
  4. Remove to plate
  5. Add minced garlic, cook 40 seconds
  6. Add sliced ginger, cook 1 minute
  7. Add coarsely chopped onion, cook 3 minutes
  8. Add coriander and turmeric, stir (30 seconds)
  9. Add chopped tomatoes, cook 2 minutes
  10. Add sliced green chilli, black pepper
  11. Return mutton, toss to coat
  12. Pour water, add salt, bay leaf, cinnamon
  13. Bring to boil (5 min)
  14. Reduce heat to medium-low
  15. Simmer covered 35-40 minutes until mutton is very tender (mutton takes longer than chicken or beef)
  16. Stir occasionally
  17. Test tenderness with fork (should shred easily)
  18. Serve hot
