👩🍳 How to make Mutton Thongba
- Cut mutton, pat dry (2 min)
- Heat oil in heavy pot over medium-high (1 min)
- Brown mutton in batches on all sides, 10-12 min total
- Remove to plate
- Add minced garlic, cook 40 seconds
- Add sliced ginger, cook 1 minute
- Add coarsely chopped onion, cook 3 minutes
- Add coriander and turmeric, stir (30 seconds)
- Add chopped tomatoes, cook 2 minutes
- Add sliced green chilli, black pepper
- Return mutton, toss to coat
- Pour water, add salt, bay leaf, cinnamon
- Bring to boil (5 min)
- Reduce heat to medium-low
- Simmer covered 35-40 minutes until mutton is very tender (mutton takes longer than chicken or beef)
- Stir occasionally
- Test tenderness with fork (should shred easily)
- Serve hot
