👩🍳 How to make Muan Phaba
- If using whole dried fish, pound in mortar and pestle until fine powder (2 min)
- Mix besan with salt and turmeric (1 min)
- Add ground fish, diced onion, chilli, coriander, garlic chives (2 min)
- Gradually stir in water to form thick batter (2 min)
- Heat thick tawa to medium, coat with oil
- Pour 100ml batter, flatten to 8mm thickness
- Cook 6-7 min until edges turn golden and base is firm
- Drizzle oil around perimeter, flip
- Cook 4-5 min until opposite side is light golden-brown
