👩‍🍳 How to make Muan Phaba

  1. If using whole dried fish, pound in mortar and pestle until fine powder (2 min)
  2. Mix besan with salt and turmeric (1 min)
  3. Add ground fish, diced onion, chilli, coriander, garlic chives (2 min)
  4. Gradually stir in water to form thick batter (2 min)
  5. Heat thick tawa to medium, coat with oil
  6. Pour 100ml batter, flatten to 8mm thickness
  7. Cook 6-7 min until edges turn golden and base is firm
  8. Drizzle oil around perimeter, flip
  9. Cook 4-5 min until opposite side is light golden-brown
