  1. Slit chillies lengthwise, remove seeds for milder dish or keep for spicy (2 min)
  2. Heat oil in pan over medium-high (1 min)
  3. Add minced garlic, cook 30 seconds
  4. Add minced ginger, cook 1 minute
  5. Add finely diced onion, cook 2 minutes
  6. Add slit chillies, cook 3 minutes (chillies soften slightly)
  7. Add chopped tomatoes, cook 2 minutes
  8. Add water and salt
  9. Simmer 5-7 minutes until chillies are very soft and almost translucent
  10. Stir occasionally
  11. Sauce should reduce and become thick
  12. Serve hot
