👩‍🍳 How to make Meen Thongba

  1. Pat fish steaks dry (1 min)
  2. Heat oil in pan over medium-high (1 min)
  3. Carefully place fish steaks (should sizzle), sear 2 minutes on each side until opaque (4 min)
  4. Remove fish to plate
  5. In same pan, add minced garlic, cook 30 seconds
  6. Add sliced ginger, cook 1 minute
  7. Add coarsely chopped onion, cook 2 minutes
  8. Add turmeric, stir (30 seconds)
  9. Add chopped tomatoes, cook 2 minutes
  10. Add sliced green chilli
  11. Pour water, add salt and bay leaf
  12. Return fish steaks gently, nestling into sauce
  13. Bring to boil (3 min)
  14. Reduce heat to medium-low
  15. Simmer 10-12 minutes until fish is cooked through
  16. Fish should flake easily with fork
  17. Serve hot in bowls
