👩🍳 How to make Meen Thongba
- Pat fish steaks dry (1 min)
- Heat oil in pan over medium-high (1 min)
- Carefully place fish steaks (should sizzle), sear 2 minutes on each side until opaque (4 min)
- Remove fish to plate
- In same pan, add minced garlic, cook 30 seconds
- Add sliced ginger, cook 1 minute
- Add coarsely chopped onion, cook 2 minutes
- Add turmeric, stir (30 seconds)
- Add chopped tomatoes, cook 2 minutes
- Add sliced green chilli
- Pour water, add salt and bay leaf
- Return fish steaks gently, nestling into sauce
- Bring to boil (3 min)
- Reduce heat to medium-low
- Simmer 10-12 minutes until fish is cooked through
- Fish should flake easily with fork
- Serve hot in bowls
