👩🍳 How to make Meen Dum Biryani
- Pat fish steaks dry (1 min)
- Heat 20ml oil in pan over medium-high (1 min)
- Fry thinly sliced onion until deep golden, 8-10 min
- Remove to plate
- In yogurt, mix fish pieces, minced garlic, sliced ginger, salt, turmeric, coriander powder
- Marinate 8 minutes
- In same pan with onion oil, cook marinated fish briefly 3-4 min over medium-high (fish partially cooks)
- Remove fish to plate
- Rinse rice (1 min)
- Heat ghee and 15ml oil in pot (1 min)
- Add rice, stir 2 minutes (toasting)
- Pour water, add salt, bay leaf, cardamom, sliced green chilli
- Bring to boil (4 min)
- Layer: half rice, then fish with yogurt, remaining rice
- Sprinkle fried onion, mint, remaining ghee
- Cover tightly with foil then lid
- Reduce heat to low
- Dum cook (steam) 18-20 minutes
- Remove from heat, let rest 5 minutes (residual heat finishes cooking)
- Gently fluff with fork
- Add fresh coriander
- Serve hot
