👩‍🍳 How to make Koi Thongba

  1. Cut chicken into uniform 3cm pieces, pat dry (2 min)
  2. Heat oil in pot over medium-high (1 min)
  3. When hot, add chicken pieces in batches, don't crowd, sear until browned on all sides (8-10 min total)
  4. Remove browned chicken to plate
  5. In same pot, add minced garlic, cook 30 seconds
  6. Add sliced ginger, cook 1 minute
  7. Add coarsely chopped onion, cook 2 minutes
  8. Add turmeric and coriander powder, stir quickly (30 seconds)
  9. Add chopped tomatoes, cook 2 minutes
  10. Add sliced green chilli
  11. Return chicken pieces, toss to coat
  12. Pour water, add salt and bay leaf
  13. Bring to boil (5 min)
  14. Reduce heat to medium-low
  15. Simmer covered 18-20 minutes until chicken is very tender
  16. Stir occasionally
  17. Chicken should shred easily with spoon
  18. Serve hot
