👩🍳 How to make Koi Thongba
- Cut chicken into uniform 3cm pieces, pat dry (2 min)
- Heat oil in pot over medium-high (1 min)
- When hot, add chicken pieces in batches, don't crowd, sear until browned on all sides (8-10 min total)
- Remove browned chicken to plate
- In same pot, add minced garlic, cook 30 seconds
- Add sliced ginger, cook 1 minute
- Add coarsely chopped onion, cook 2 minutes
- Add turmeric and coriander powder, stir quickly (30 seconds)
- Add chopped tomatoes, cook 2 minutes
- Add sliced green chilli
- Return chicken pieces, toss to coat
- Pour water, add salt and bay leaf
- Bring to boil (5 min)
- Reduce heat to medium-low
- Simmer covered 18-20 minutes until chicken is very tender
- Stir occasionally
- Chicken should shred easily with spoon
- Serve hot
