👩🍳 How to make Khichdi Chakra
- Rinse rice and moong dal together (1 min)
- Heat oil in heavy-bottomed pot over medium heat (1 min)
- Add cumin seeds, let crackle 30 seconds
- Add asafoetida, swirl (10 seconds)
- Add grated ginger, minced chilli, sauté 1 minute
- Pour in rinsed rice and dal, stir for 2 minutes
- Add water and salt
- Bring to boil (5 minutes)
- Reduce heat to low, cover with lid
- Simmer for 15-18 minutes until rice breaks down and khichdi becomes creamy
- Stir occasionally (every 3 minutes) to prevent sticking
- When grains are fully soft and mixture is porridge-like, add coriander
- Serve hot
