👩🍳 How to make Kheer
- Rinse rice (1 min)
- Heat ghee in heavy pan over medium (1 min)
- Add rice, stir 2 minutes (toasting rice improves flavor)
- Pour milk gradually, stirring
- Add crushed cardamom, bring to boil (5 min)
- Reduce heat to low
- Simmer uncovered 12-15 minutes, stirring frequently
- Rice grains should be very soft and milk should reduce and thicken
- Add jaggery, stir until dissolved
- In a separate pan, quickly fry raisins and cashews in 5ml ghee until golden (2 min)
- Add fried nuts to kheer
- Add nutmeg powder
- Stir gently
- Serve warm or chilled
