👩‍🍳 How to make Kheer

  1. Rinse rice (1 min)
  2. Heat ghee in heavy pan over medium (1 min)
  3. Add rice, stir 2 minutes (toasting rice improves flavor)
  4. Pour milk gradually, stirring
  5. Add crushed cardamom, bring to boil (5 min)
  6. Reduce heat to low
  7. Simmer uncovered 12-15 minutes, stirring frequently
  8. Rice grains should be very soft and milk should reduce and thicken
  9. Add jaggery, stir until dissolved
  10. In a separate pan, quickly fry raisins and cashews in 5ml ghee until golden (2 min)
  11. Add fried nuts to kheer
  12. Add nutmeg powder
  13. Stir gently
  14. Serve warm or chilled
