  1. Cut vegetables into small uniform pieces (2 min)
  2. Heat oil in pot over medium (1 min)
  3. Add cumin, let crackle 30 seconds
  4. Add minced garlic, cook 30 seconds
  5. Add sliced ginger, cook 1 minute
  6. Add coarsely chopped onion, cook 2 minutes
  7. Add whole dry red chillies
  8. Add sliced green chilli
  9. Add chopped tomatoes, cook 2 minutes
  10. Add vegetable pieces, stir (1 min)
  11. Pour water, add salt
  12. Bring to boil (5 min)
  13. Reduce heat to medium
  14. Simmer 12-15 minutes until vegetables are tender
  15. Stir occasionally
  16. Serve hot
