- Cut vegetables into small uniform pieces (2 min)
- Heat oil in pot over medium (1 min)
- Add cumin, let crackle 30 seconds
- Add minced garlic, cook 30 seconds
- Add sliced ginger, cook 1 minute
- Add coarsely chopped onion, cook 2 minutes
- Add whole dry red chillies
- Add sliced green chilli
- Add chopped tomatoes, cook 2 minutes
- Add vegetable pieces, stir (1 min)
- Pour water, add salt
- Bring to boil (5 min)
- Reduce heat to medium
- Simmer 12-15 minutes until vegetables are tender
- Stir occasionally
- Serve hot
