👩🍳 How to make Kabok Thongba
- Cut bird, pat dry (2 min)
- Heat oil in heavy pot over medium-high (1 min)
- Brown meat in batches 9-11 min total (game birds have stronger flesh, needs thorough browning)
- Remove to plate
- Add minced garlic, cook 40 seconds
- Add sliced ginger, cook 1 minute
- Add coarsely chopped onion, cook 2 minutes
- Add coriander and turmeric, stir (30 seconds)
- Add chopped tomatoes, cook 2 minutes
- Add sliced green chilli, black pepper
- Return meat, toss to coat
- Pour water, add salt and bay leaf
- Bring to boil (5 min)
- Reduce heat to medium-low
- Simmer covered 30-35 minutes until meat is very tender
- Stir occasionally
- Serve hot
