👩‍🍳 How to make Kabok Thongba

  1. Cut bird, pat dry (2 min)
  2. Heat oil in heavy pot over medium-high (1 min)
  3. Brown meat in batches 9-11 min total (game birds have stronger flesh, needs thorough browning)
  4. Remove to plate
  5. Add minced garlic, cook 40 seconds
  6. Add sliced ginger, cook 1 minute
  7. Add coarsely chopped onion, cook 2 minutes
  8. Add coriander and turmeric, stir (30 seconds)
  9. Add chopped tomatoes, cook 2 minutes
  10. Add sliced green chilli, black pepper
  11. Return meat, toss to coat
  12. Pour water, add salt and bay leaf
  13. Bring to boil (5 min)
  14. Reduce heat to medium-low
  15. Simmer covered 30-35 minutes until meat is very tender
  16. Stir occasionally
  17. Serve hot
