👩‍🍳 How to make Iromba

  1. Peel potatoes, cut into chunks (2 min)
  2. If using whole ngari, pound into fine powder with mortar (2 min)
  3. In pot, add potatoes, whole green chillies, coarsely chopped onion
  4. Add water and salt
  5. Bring to boil (5 min)
  6. Add chopped tomatoes
  7. Reduce heat to medium-low
  8. Simmer 12-15 minutes until potatoes are very soft
  9. Remove from heat
  10. Add pounded ngari, stir well
  11. Mash entire mixture to fine paste using potato masher
  12. Consistency should be thick and creamy, not completely smooth
  13. Taste for salt, adjust if needed
  14. Serve warm
