- Mix rice flour with jaggery powder and salt (1 min)
- Add finely minced ginger and cardamom powder (1 min)
- Toast sesame seeds in dry pan 2 minutes, add to flour mixture (2 min)
- Gradually add water to form soft dough (1 min)
- Knead gently with oiled palms until smooth (1 min)
- Divide into 5 equal portions
- On oiled surface, flatten each portion to thin circle (3mm thick)
- Heat tawa to medium, lightly oil
- Place tan on tawa, cook 3-4 min per side until pale golden
- Press gently with spatula to ensure even cooking
